Method

  1. Heat oven to 400°F. Rub the turkey breast with 2 tbsp softened butter, salt and pepper; roast about 60-75 minutes until it reads 165°F inside, then rest 15 minutes and slice.
  2. Boil peeled, cubed potatoes in salted water for 15-20 minutes until tender, drain, and mash with 3 tbsp butter and warm milk until creamy.
  3. Prepare the stuffing mix per package directions using broth and a little butter; bake covered alongside the turkey for the last 25 minutes, uncovered for the last 5 to crisp.
  4. Mash the sweet potatoes with a spoonful of butter, spread in a small dish, top with marshmallows and broil 1-2 minutes until golden brown.
  5. Halve Brussels sprouts, toss with olive oil, salt and pepper, and roast cut-side down at 425°F for 20-25 minutes until browned.
  6. Warm the green beans and corn in separate pots with a pinch of salt and a little butter.
  7. Make the gravy from the mix, adding turkey pan drippings if you have them for deeper flavor.
  8. Plate sliced turkey with stuffing, mashed potatoes, sweet potatoes and vegetables, and pour gravy over the turkey, stuffing and potatoes.
